Instructions
- Preheat the oven to 350°F (176°C) and lightly grease a muffin pan.
- Combine flaxseed meal and water in a food processor and let it rest.
- Add the remaining ingredients (except toppings) to the food processor and blend until smooth.
- If the batter is too thick, add a little water to adjust the consistency.
- Spoon the batter into the muffin tin and smooth the tops.
- Optionally, sprinkle with toppings like walnuts or chocolate chips.
- Bake for 20-26 minutes or until the tops are dry and edges pull away from the sides.
- Let cool for 30 minutes before removing from the pan.
