Ingredients

The brownies

  • 2 Tbsp flaxseed meal
  • 6 Tbsp water
  • 1 15-oz. can black beans
  • 3 Tbsp coconut oil
  • ¾ cup cocoa powder
  • ¼ tsp sea salt
  • 1 tsp pure vanilla extract
  • ½ cup organic cane sugar
  • tsp baking powder

Optional toppings

  • to taste crushed walnuts
  • to taste pecans
  • to taste dairy-free semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (176°C) and lightly grease a muffin pan.
  2. Combine flaxseed meal and water in a food processor and let it rest.
  3. Add the remaining ingredients (except toppings) to the food processor and blend until smooth.
  4. If the batter is too thick, add a little water to adjust the consistency.
  5. Spoon the batter into the muffin tin and smooth the tops.
  6. Optionally, sprinkle with toppings like walnuts or chocolate chips.
  7. Bake for 20-26 minutes or until the tops are dry and edges pull away from the sides.
  8. Let cool for 30 minutes before removing from the pan.
