Easy Hamburger Soup

Ingredients

The soup base

  • 1 pound ground beef 90% lean
  • 1 small onion, finely diced
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • ½ pound yellow potatoes, cut into ½-inch cubes
  • 14 ounces canned fire-roasted diced tomatoes
  • 4 cups chicken or beef broth
  • ½ teaspoon dried oregano
  • 1 leaf dried bay leaf
  • 3 cups frozen mixed vegetables
  • to taste freshly ground black pepper

Seasoning

  • ½ teaspoon Magic Mushroom Powder or Diamond Crystal kosher salt

Instructions

  1. 1. Heat a large stockpot or dutch oven over medium-high heat and add the ground beef and onions.
  2. 2. Sprinkle on the Magic Mushroom Powder or salt and cook until the beef is no longer pink and the onions have softened.
  3. 3. Stir in the tomato paste and minced garlic, cooking until fragrant.
  4. 4. Add the potatoes, canned tomatoes, and broth, scraping up any browned bits from the bottom.
  5. 5. Stir in the dried oregano and bay leaf, then cover and bring to a boil.
  6. 6. Once boiling, reduce the heat to maintain a simmer and skim off any scum.
  7. 7. Simmer for 15 minutes or until the potatoes are tender.
  8. 8. Add the frozen vegetables and simmer for an additional 3 to 5 minutes until cooked through.
  9. 9. Taste and adjust seasoning as needed before serving.
