Instructions
- Heat oil in a large pot over medium heat and cook the ground beef until no longer pink, breaking it into small pieces.
- Add onion, garlic, thyme, bay leaves, and Creole seasoning; cook until onions are wilted and beef is slightly browned.
- Stir in carrots and celery, then add tomatoes with their liquid, potatoes, tomato paste, beef bouillon, and Worcestershire sauce.
- Pour in beef broth, water, salt, and pepper to taste; bring to a low boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally until potatoes are tender, adding water if the sauce gets too thick.
- Add green peas and cook for an additional 2-3 minutes until heated through.
- Adjust the thickness of the soup and seasonings as needed, then top with parsley and serve hot.
