Ingredients

The soup base

  • 1 tablespoon oil
  • 1 pound lean ground beef
  • 1 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons minced thyme
  • 1-2 pieces bay leaves
  • 1 tablespoon Creole or Cajun seasoning

The vegetables

  • 1 cup carrots, diced
  • 1 cup celery stalks, diced
  • 1 can diced or crushed tomatoes
  • 2-2½ cups potatoes, peeled and cubed
  • ¾ cup frozen peas, optional

The flavorings

  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon tomato paste
  • 2 teaspoons beef bouillon
  • 2 cups beef broth
  • 1-2 cups water, as needed

The garnish

  • 2-3 tablespoons chopped fresh parsley

Instructions

  1. Heat oil in a large pot over medium heat and cook the ground beef until no longer pink, breaking it into small pieces.
  2. Add onion, garlic, thyme, bay leaves, and Creole seasoning; cook until onions are wilted and beef is slightly browned.
  3. Stir in carrots and celery, then add tomatoes with their liquid, potatoes, tomato paste, beef bouillon, and Worcestershire sauce.
  4. Pour in beef broth, water, salt, and pepper to taste; bring to a low boil.
  5. Reduce heat and simmer for 20 minutes, stirring occasionally until potatoes are tender, adding water if the sauce gets too thick.
  6. Add green peas and cook for an additional 2-3 minutes until heated through.
  7. Adjust the thickness of the soup and seasonings as needed, then top with parsley and serve hot.
