Ingredients

  • 2 pounds lean ground beef
  • 2 cups onion, diced
  • 2 cups celery, diced
  • 2 cups carrots, diced
  • 3 cloves garlic, minced
  • 6-8 cups beef broth
  • 28 ounces diced tomatoes with juice
  • 3 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 2 tablespoons Worcestershire sauce
  • 1 cup elbow macaroni (optional)
  • 1 cup frozen peas
  • to taste salt and black pepper
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the ground beef.
  2. Remove the browned beef and set aside.
  3. Add diced carrots, onions, celery, and garlic to the pot and sauté for 2-3 minutes.
  4. Stir in diced tomatoes, tomato paste, oregano, Worcestershire sauce, and beef broth. Season with salt and pepper.
  5. Return the ground beef to the pot and bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Add elbow macaroni and simmer for an additional 8-10 minutes.
  7. Stir in frozen peas and chopped parsley, then simmer for 5 more minutes until heated through.
