Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion, carrots, and celery; cook until softened.
- Add ground beef, season with salt and pepper, and cook until browned.
- Stir in minced garlic and cook for 30 seconds.
- Add diced tomatoes, tomato sauce, Italian seasoning, beef broth, and potato; bring to a simmer.
- Cook for 25-30 minutes until potatoes are tender.
- Taste and adjust seasoning as needed.
- Stir in corn and green beans; cook for an additional 5 minutes.
- Sprinkle with parsley before serving.
