Lasagna Wontons

Ingredients

The wontons

  • 48 pieces vegan wonton or gyoza wrappers

The filling

  • ¾ cup finely chopped spinach
  • ¾ cup finely chopped mushrooms
  • ½ cup red sauce
  • ¼ cup Cashew Walnut Cream Sauce
  • 1 small cup water (to moisten wrappers)
  • to taste none more red sauce (for dipping, optional)
  • to taste none oil (to brush on top before baking, optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the red sauce and/or cream sauce if needed, and wash and chop the vegetables.
  3. Place one wrapper on your workspace and brush it with water, moistening the edges.
  4. Add a spoonful of red sauce in the center of the wrapper, then add spinach, mushrooms, and cream sauce.
  5. Place a second wrapper on top and press down the edges with a fork, using more water if needed.
  6. Repeat the process until all wrappers are used.
  7. Place the filled wontons on a parchment-lined cookie sheet and brush with water or oil.
  8. Bake for 10 minutes or until browned around the edges, serving with more red sauce for dipping.
