Goat Cheese Wontons

Instructions
- Preheat the oven to 400 degrees.
- In a medium bowl, mix goat cheese, cooked quinoa, basil, crushed red pepper, and minced garlic.
- Lay out the wonton wrappers on a baking sheet and place a teaspoon or two of the filling on each wrapper.
- Brush the edges of the wrappers with water and fold them to form triangles, pressing the edges to seal.
- Spray the tops of the filled wontons with olive oil spray and sprinkle with parmesan cheese.
- Bake for 8 to 10 minutes until golden brown.
- To prepare the sauce, blend roasted red peppers, Greek yogurt, basil, garlic, sea salt, and black pepper until smooth.
