Ingredients

The filling

  • 6 ounce wonton wrappers
  • 4 ounce goat cheese
  • 1 cup cooked quinoa
  • 1 tablespoon basil, chopped fine
  • teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • ¼ cup fresh parmesan, grated

The sauce

  • ½ cup roasted red peppers
  • ½ cup plain Greek yogurt
  • 2 tablespoons basil, chopped
  • 6 cloves garlic, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

For cooking

  • 1 spray olive oil cooking spray

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, mix goat cheese, cooked quinoa, basil, crushed red pepper, and minced garlic.
  3. Lay out the wonton wrappers on a baking sheet and place a teaspoon or two of the filling on each wrapper.
  4. Brush the edges of the wrappers with water and fold them to form triangles, pressing the edges to seal.
  5. Spray the tops of the filled wontons with olive oil spray and sprinkle with parmesan cheese.
  6. Bake for 8 to 10 minutes until golden brown.
  7. To prepare the sauce, blend roasted red peppers, Greek yogurt, basil, garlic, sea salt, and black pepper until smooth.
