Ingredients

The filling

  • 10 oz. Frozen Chopped Spinach, Thawed
  • cup Non-fat Greek Yogurt
  • cup Mozzarella Cheese
  • cup Parmesan cheese
  • 8 oz. Reduced Fat Cream Cheese
  • 1 tbsp. Dijon Mustard
  • 2 tsp. Garlic, minced
  • to taste Salt and pepper

The cups

  • 24 Wonton wrappers

Instructions

  1. Preheat the oven to 400°F.
  2. Thaw the spinach and remove excess water.
  3. In a large bowl, combine the spinach with softened cream cheese, Dijon mustard, Parmesan cheese, mozzarella cheese, Greek yogurt, minced garlic, salt, and pepper.
  4. Spray a muffin tin with cooking spray and place the wonton wrappers in the cups.
  5. Fill each wonton cup with about 2 tablespoons of the spinach dip mixture.
  6. Garnish with extra Parmesan and crushed red pepper flakes.
  7. Bake in the oven for 10-11 minutes until the edges are crunchy.
