Ingredients

The filling

  • 4 oz fresh spinach
  • 1 clove garlic, minced
  • 4 oz 1/3 less fat cream cheese, softened
  • 2 tablespoons fat free sour cream
  • cup shredded 2% Mozzarella cheese
  • cup artichoke hearts, canned without oil, diced
  • 1 tablespoon grated Parmesan cheese
  • 1 pinch black pepper
  • 1 pinch crushed red pepper flakes

The wrappers

  • 20 wonton wrappers

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper, misting it with cooking spray.
  2. Mist a skillet with cooking spray and heat over medium. Cook the spinach until wilted, then add the garlic and cook until fragrant.
  3. Transfer the spinach and garlic to a mixing bowl and combine with cream cheese, sour cream, Mozzarella, artichoke hearts, Parmesan, pepper, and red pepper flakes.
  4. Prepare a small dish of water. Lay a wonton wrapper on a clean surface, scoop a tablespoon of the filling into the center, and wet the edges with water.
  5. Gather the corners of the wrapper to the center and seal the edges tightly. Place the sealed wonton on the baking sheet.
  6. Repeat the process to make 20 wonton bites, mist the tops with cooking spray, and bake for 10-12 minutes until golden.
  7. Serve warm.
