Ingredients

The filling

  • 1 package frozen chopped spinach
  • 4 oz softened cream cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup chopped artichoke
  • cup chopped water chestnuts
  • 2 pieces green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • to taste salt

The wrappers and garnish

  • 24 wonton wrappers
  • ½ cup quartered cherry tomatoes

Instructions

  1. Preheat the oven to 400°F.
  2. Cook frozen spinach in a saucepan with water until thawed and cooked, about 8-10 minutes. Drain and squeeze out excess liquid.
  3. In a bowl, combine spinach with cream cheese, mozzarella, artichoke, water chestnuts, green onion, garlic powder, onion powder, red pepper flakes, and salt. Mix well.
  4. Spray a mini cupcake pan with cooking spray and place a wonton wrapper in each muffin hole, pressing it down.
  5. Fill each wonton wrapper with one tablespoon of the spinach artichoke mixture.
  6. Top each wonton cup with two quartered cherry tomatoes.
  7. Bake for 8-10 minutes until edges are slightly browned.
  8. Serve warm.
