Spinach Artichoke Wontons

Ingredients

The filling

  • 6 ounces cream cheese, softened
  • ½ box frozen spinach, thawed and excess water squeezed out
  • ½ cup marinated artichoke hearts, finely chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • to taste salt and pepper

The wrappers and frying

  • 24 wonton wrappers
  • 1 large egg, beaten
  • oil for frying

The garnish

  • ½ cup diced tomatoes, seeded
  • 1 tablespoon chopped parsley

Instructions

  1. Combine cream cheese, spinach, artichoke hearts, mozzarella cheese, parmesan cheese, salt, and pepper in a bowl and mix well.
  2. Refrigerate the mixture for 30 minutes.
  3. Place a wonton wrapper on a flat surface and put 1½ teaspoons of the cream cheese mixture in the center.
  4. Brush the edges of the wonton with the beaten egg.
  5. Fold the wonton by bringing opposite corners together and pinching to seal.
  6. Repeat with remaining wontons and filling.
  7. Heat oil in a deep pan to 350°F.
  8. Fry 5-6 wontons at a time for about 3-5 minutes until golden brown, turning as needed.
  9. Drain cooked wontons on paper towels.
  10. Mix diced tomatoes and parsley with a pinch of salt in a small bowl.
  11. Serve wontons immediately, topped with the tomato mixture or on the side.
