Spinach Artichoke Wontons

The wrappers and frying

egg, beaten

The garnish

diced tomatoes, seeded

chopped parsley
Instructions
- Combine cream cheese, spinach, artichoke hearts, mozzarella cheese, parmesan cheese, salt, and pepper in a bowl and mix well.
- Refrigerate the mixture for 30 minutes.
- Place a wonton wrapper on a flat surface and put 1½ teaspoons of the cream cheese mixture in the center.
- Brush the edges of the wonton with the beaten egg.
- Fold the wonton by bringing opposite corners together and pinching to seal.
- Repeat with remaining wontons and filling.
- Heat oil in a deep pan to 350°F.
- Fry 5-6 wontons at a time for about 3-5 minutes until golden brown, turning as needed.
- Drain cooked wontons on paper towels.
- Mix diced tomatoes and parsley with a pinch of salt in a small bowl.
- Serve wontons immediately, topped with the tomato mixture or on the side.
