Ingredients

The chicken

  • 1½ - 2 lbs chicken thighs
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 3 sprigs thyme
  • ¼ teaspoon salt
  • to taste ground black pepper

The sauce

  • ½ cup chicken broth
  • ½ cup heavy whipping cream
  • ½ cup sun dried tomatoes, with its oil
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. 1. Season the chicken thighs with salt and pepper.
  2. 2. Sauté the chicken thighs in olive oil in the Instant Pot until browned on both sides.
  3. 3. Remove excess fat from the pot and sauté the garlic briefly.
  4. 4. Add chicken broth, heavy cream, sun-dried tomatoes, thyme, and salt to the pot.
  5. 5. Cover the pot, set to high pressure for 10 minutes, then quick release the pressure.
  6. 6. Switch to sauté mode, add Parmesan cheese, and cook for 2 minutes to reduce the sauce slightly.
  7. 7. Serve immediately.
