Instructions
- 1. Season the chicken thighs with salt and pepper.
- 2. Sauté the chicken thighs in olive oil in the Instant Pot until browned on both sides.
- 3. Remove excess fat from the pot and sauté the garlic briefly.
- 4. Add chicken broth, heavy cream, sun-dried tomatoes, thyme, and salt to the pot.
- 5. Cover the pot, set to high pressure for 10 minutes, then quick release the pressure.
- 6. Switch to sauté mode, add Parmesan cheese, and cook for 2 minutes to reduce the sauce slightly.
- 7. Serve immediately.
