One Pot Spaghetti

olive oil or avocado oil
Instructions
- Heat oil in a dutch oven or large pot over medium heat.
- Add onions, carrots, and garlic; stir for 3-4 minutes.
- Add ground beef, seasoning with salt and pepper.
- Once meat is nearly cooked, add broth, diced tomatoes, spaghetti, and Italian seasoning.
- Bring to a light simmer, cover, and reduce heat to low.
- After 12-14 minutes, stir the pasta; it should be al dente.
- Cover again and cook for another 8 minutes.
- Remove from heat and let sit for 10 minutes to absorb liquid (20 minutes for gluten-free pasta).
- Adjust seasonings to taste and serve.
