One Pot Spaghetti

Ingredients

The pasta and broth

  • 8-10 oz spaghetti
  • 3 cups chicken or beef broth

The sauce

  • 1 28 oz can diced tomatoes
  • 1 lb ground beef
  • 4 cloves garlic
  • ½ onion diced
  • 2 carrots diced
  • 2 tbsp Italian seasoning
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 2 tbsp olive oil or avocado oil

Instructions

  1. Heat oil in a dutch oven or large pot over medium heat.
  2. Add onions, carrots, and garlic; stir for 3-4 minutes.
  3. Add ground beef, seasoning with salt and pepper.
  4. Once meat is nearly cooked, add broth, diced tomatoes, spaghetti, and Italian seasoning.
  5. Bring to a light simmer, cover, and reduce heat to low.
  6. After 12-14 minutes, stir the pasta; it should be al dente.
  7. Cover again and cook for another 8 minutes.
  8. Remove from heat and let sit for 10 minutes to absorb liquid (20 minutes for gluten-free pasta).
  9. Adjust seasonings to taste and serve.
