Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 6 cloves garlic, minced
  • 14 oz. fresh tomatoes, diced
  • 2 cups chicken broth
  • 1 tablespoon chopped Italian basil
  • 8 oz. spaghetti
  • ¼ teaspoon salt
  • ¼ cup shredded Parmesan cheese
  • 1 tablespoon chopped Italian parsley

Instructions

  1. Heat oil in a wide skillet or pot over medium heat, then sauté onion and garlic until browned.
  2. Add tomatoes, chicken broth, Italian basil, and spaghetti, pressing the spaghetti to submerge it in the liquid.
  3. Cover and reduce heat to medium-low, cooking for 8 minutes until al dente, adding more broth if needed.
  4. Uncover, add salt, and turn off the heat. Top with Parmesan cheese and parsley before serving.
