Ingredients

  • 4 Tbsp extra virgin olive oil
  • 3 oz pancetta
  • 1 ¼ cups chopped yellow onion
  • 1 ½ Tbsp minced fresh garlic
  • 2 ¾ cups vegetable broth
  • 1 can (28 oz) diced tomatoes
  • 1 ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt to taste salt
  • Pepper to taste black pepper
  • 12 oz penne pasta
  • 1 ½ cups chopped fresh spinach
  • ¼ cup chopped fresh basil
  • 1 cup finely shredded parmesan

Instructions

  1. Heat 2 Tbsp of olive oil in a pot over medium heat and sauté pancetta for 2 minutes.
  2. Add chopped onion and sauté for 3 minutes, then add minced garlic and sauté for an additional 30 seconds.
  3. Pour in the vegetable broth, diced tomatoes, Italian seasoning, red pepper flakes, and season with salt and pepper.
  4. Increase heat to medium-high and bring the mixture to a simmer, then stir in the penne pasta.
  5. Reduce heat to medium-low, cover, and simmer until pasta is nearly al dente, about 11 minutes, stirring halfway through.
  6. Let the pasta rest off heat for a few minutes, adding more broth if needed.
  7. Toss in ½ cup of parmesan cheese, fresh spinach, and basil.
  8. Serve drizzled with the remaining 2 Tbsp of olive oil and sprinkle with the remaining ½ cup of parmesan.
