One Pot Pasta

Instructions
- Heat 2 Tbsp of olive oil in a pot over medium heat and sauté pancetta for 2 minutes.
- Add chopped onion and sauté for 3 minutes, then add minced garlic and sauté for an additional 30 seconds.
- Pour in the vegetable broth, diced tomatoes, Italian seasoning, red pepper flakes, and season with salt and pepper.
- Increase heat to medium-high and bring the mixture to a simmer, then stir in the penne pasta.
- Reduce heat to medium-low, cover, and simmer until pasta is nearly al dente, about 11 minutes, stirring halfway through.
- Let the pasta rest off heat for a few minutes, adding more broth if needed.
- Toss in ½ cup of parmesan cheese, fresh spinach, and basil.
- Serve drizzled with the remaining 2 Tbsp of olive oil and sprinkle with the remaining ½ cup of parmesan.
