Instructions
- 1. Heat olive oil in a large pot and brown the sausage links.
- 2. Remove the sausage, slice it, and return it to the pot to brown further.
- 3. While the sausage cooks, prepare the garlic, onion, and mushrooms.
- 4. Add crushed tomatoes, onion, garlic, mushrooms, basil, and oregano to the pot and stir.
- 5. Pour in vegetable broth and add rigatoni, stirring to combine.
- 6. Cover the pot, bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
- 7. Check for tenderness of pasta and adjust liquid if necessary.
- 8. Stir in Parmesan and top with parsley before serving.
