One Pot Sausage & Mushroom Pasta

Ingredients

  • 2 Tbsp olive oil
  • 2-3 links Italian sausage
  • 2 cloves garlic
  • 1 medium yellow onion
  • 8 oz mushrooms
  • 1 28 oz can crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 4 cups vegetable broth
  • 1 lb rigatoni
  • ΒΌ cup grated Parmesan
  • 1 handful fresh parsley (optional)

Instructions

  1. 1. Heat olive oil in a large pot and brown the sausage links.
  2. 2. Remove the sausage, slice it, and return it to the pot to brown further.
  3. 3. While the sausage cooks, prepare the garlic, onion, and mushrooms.
  4. 4. Add crushed tomatoes, onion, garlic, mushrooms, basil, and oregano to the pot and stir.
  5. 5. Pour in vegetable broth and add rigatoni, stirring to combine.
  6. 6. Cover the pot, bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
  7. 7. Check for tenderness of pasta and adjust liquid if necessary.
  8. 8. Stir in Parmesan and top with parsley before serving.
