Instructions
- Heat olive oil in a Dutch oven or large pot over medium-low heat.
- Add onion and spinach, sauté for 4-5 minutes until the onion is soft.
- Stir in garlic, curry powder, salt, black pepper, and red pepper flakes; sauté for 30-60 seconds until fragrant.
- Add peas and sauté for another 60-90 seconds.
- Pour in stock, diced tomatoes, and evaporated milk; bring to a simmer.
- Add pasta and cook for 8-10 minutes until al dente and sauce thickens, stirring frequently.
- Reduce heat to maintain a low simmer if necessary.
- Stir in lemon zest and juice; taste and adjust seasoning if needed.
