Ingredients

  • 1 tablespoon olive oil
  • ½ medium white or yellow onion
  • 4 cups fresh or frozen spinach leaves
  • 4 cloves garlic
  • 1 tablespoon curry powder
  • 1 ½ teaspoons coarse salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon crushed red pepper flakes
  • 2 cups frozen spring peas
  • 4 cups unsalted vegetable or chicken stock
  • 15 ounces petite diced tomatoes
  • 12 ounces evaporated milk
  • 14 ounces whole grain penne pasta
  • ½ medium lemon

Instructions

  1. Heat olive oil in a Dutch oven or large pot over medium-low heat.
  2. Add onion and spinach, sauté for 4-5 minutes until the onion is soft.
  3. Stir in garlic, curry powder, salt, black pepper, and red pepper flakes; sauté for 30-60 seconds until fragrant.
  4. Add peas and sauté for another 60-90 seconds.
  5. Pour in stock, diced tomatoes, and evaporated milk; bring to a simmer.
  6. Add pasta and cook for 8-10 minutes until al dente and sauce thickens, stirring frequently.
  7. Reduce heat to maintain a low simmer if necessary.
  8. Stir in lemon zest and juice; taste and adjust seasoning if needed.
