One Pot Curry Pasta

Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the onion, garlic, ginger, and cayenne for a few minutes until fragrant.
- Add the red curry paste, mixing well.
- Pour in the coconut milk, vegetable broth, pasta, salt, and pepper.
- Reduce heat to low, cover, and cook for 5-7 minutes.
- Remove the cover and add the broccolini or broccoli florets.
- Stir, cover again, and cook for another 5-7 minutes or until pasta is cooked and sauce has reduced.
- Season to taste and serve.
