Ingredients

  • 4 cloves garlic
  • 1 medium onion
  • 2 tbsp olive oil
  • 3 tbsp red curry paste
  • 1 tbsp ground ginger
  • ½ tsp cumin
  • 1 cup vegetable broth
  • 12 ounces pasta of choice
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • ¼ tsp cayenne
  • 1 can full fat coconut milk
  • 2 cups broccolini or broccoli florets

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the onion, garlic, ginger, and cayenne for a few minutes until fragrant.
  3. Add the red curry paste, mixing well.
  4. Pour in the coconut milk, vegetable broth, pasta, salt, and pepper.
  5. Reduce heat to low, cover, and cook for 5-7 minutes.
  6. Remove the cover and add the broccolini or broccoli florets.
  7. Stir, cover again, and cook for another 5-7 minutes or until pasta is cooked and sauce has reduced.
  8. Season to taste and serve.
