Creamy One Pot Broccoli Pasta

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 Small Onion, diced
  • 3 Cloves Garlic, mashed
  • 1 16 Ounce Package Pasta of Choice
  • ¾ Cup Whole-Milk Plain Yogurt
  • 1 Pound Broccoli, cut into bite-sized florets
  • 1 Teaspoon Crushed Red Pepper Flakes
  • Cups Broth of Choice
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • 1 Cup Parmigiano Reggiano, freshly grated

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Dice onion and garlic, then sauté in the hot oil for 3-4 minutes until fragrant.
  3. Add a pinch of sea salt and black pepper.
  4. Add dry pasta, yogurt, broccoli, broth, red pepper flakes, and more olive oil to the pan.
  5. Stir well to prevent sticking and curdling, then cover and reduce heat to medium-low.
  6. Cook until liquid is absorbed and noodles are al dente, about 11 minutes.
  7. Remove cover and stir in ¾ cup of Parmigiano Reggiano until fully incorporated.
  8. Plate the pasta, top with remaining cheese, serve, and enjoy.
