Ingredients

The pasta

  • 12 oz brown rice fusilli pasta

The vegetables

  • 1 small yellow onion
  • 2 cloves garlic
  • 1 large head broccoli
  • 1 package sliced mushrooms
  • 1 can diced tomatoes
  • 1 bag fresh spinach

The sauce

  • cups jarred pasta sauce
  • 3 cups low sodium stock

The seasonings

  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes

The topping

  • to taste parmesan cheese

Instructions

  1. Heat olive oil in a large saucepan over medium-high heat.
  2. Sauté the onion until translucent, then add garlic and cook until fragrant.
  3. Add the remaining ingredients, stirring to combine.
  4. Cover and bring to a boil.
  5. Reduce heat to medium-low and cook for 15-20 minutes, stirring occasionally until most liquid is absorbed.
  6. Turn off heat, add spinach, stir, and cover for 5 minutes.
  7. Top with freshly grated parmesan cheese before serving.
