Instructions
- Heat olive oil in a large saucepan over medium-high heat.
- Sauté the onion until translucent, then add garlic and cook until fragrant.
- Add the remaining ingredients, stirring to combine.
- Cover and bring to a boil.
- Reduce heat to medium-low and cook for 15-20 minutes, stirring occasionally until most liquid is absorbed.
- Turn off heat, add spinach, stir, and cover for 5 minutes.
- Top with freshly grated parmesan cheese before serving.
