Tomato Spinach One Pot Pasta

Ingredients

The pasta and broth

  • 4 cups vegetable broth
  • 12 oz. fettuccine

The vegetables and seasonings

  • 8 oz. frozen chopped spinach
  • 1 28 oz. can diced tomatoes
  • 1 medium yellow onion, sliced
  • 4 cloves garlic, sliced
  • ½ Tbsp dried basil
  • ½ Tbsp dried oregano
  • ¼ tsp crushed red pepper
  • to taste freshly cracked black pepper

The finishing touches

  • 2 oz. shaved Parmesan
  • 2 Tbsp olive oil

Instructions

  1. Add vegetable broth to a large pot and break the fettuccine in half before adding it to the pot along with the diced tomatoes, olive oil, frozen spinach, onion, garlic, basil, oregano, red pepper, and black pepper.
  2. Ensure all ingredients are submerged in the liquid, cover the pot, and bring to a boil on high heat.
  3. Once boiling, reduce heat to medium and let it boil uncovered for 10-15 minutes, stirring occasionally to prevent sticking.
  4. When the pasta is cooked and most of the liquid is absorbed, sprinkle with shaved Parmesan before serving.
