Instructions
- Add vegetable broth to a large pot and break the fettuccine in half before adding it to the pot along with the diced tomatoes, olive oil, frozen spinach, onion, garlic, basil, oregano, red pepper, and black pepper.
- Ensure all ingredients are submerged in the liquid, cover the pot, and bring to a boil on high heat.
- Once boiling, reduce heat to medium and let it boil uncovered for 10-15 minutes, stirring occasionally to prevent sticking.
- When the pasta is cooked and most of the liquid is absorbed, sprinkle with shaved Parmesan before serving.
