One Pot Creamy Lemon Spinach Pasta

Instructions
- Heat oil in a large pot and sauté the onions, shallot, and garlic until soft.
- Add broth, coconut milk, pasta, sea salt, pepper, cumin, and lemon juice.
- Stir everything together well.
- Cover and reduce heat to low, letting it simmer for 15-18 minutes.
- Remove the lid and stir in the spinach and lemon zest.
- Return the lid and turn off the heat, allowing the liquid to absorb.
- Serve with optional toppings.
