Ingredients

The pasta

  • 1 package pasta of choice (14-16 oz)

The sauce

  • 4 cups organic spinach
  • 3 cups veggie broth or bone broth
  • 1 can full fat coconut milk
  • 2 tbsp olive oil or oil of choice
  • 2 lemons juiced + zest of one lemon
  • 1 tsp cumin
  • 2 tsp sea salt
  • 1 tsp pepper
  • 1 onion chopped
  • 1 shallot chopped
  • 4 cloves garlic, mashed

Optional toppings

  • to taste shredded parmesan cheese
  • to taste red pepper flakes

Instructions

  1. Heat oil in a large pot and sauté the onions, shallot, and garlic until soft.
  2. Add broth, coconut milk, pasta, sea salt, pepper, cumin, and lemon juice.
  3. Stir everything together well.
  4. Cover and reduce heat to low, letting it simmer for 15-18 minutes.
  5. Remove the lid and stir in the spinach and lemon zest.
  6. Return the lid and turn off the heat, allowing the liquid to absorb.
  7. Serve with optional toppings.
