Artichoke, Green Peas and Preserved Lemon Salad

Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 2 small preserved lemons
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • 200 g frozen green peas
  • 2 tablespoons finely chopped coriander
  • ¼ teaspoon salt
  • 200 g drained precooked artichokes
  • 60 g drained red-brown olives

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add garlic, preserved lemon, turmeric, and ginger, and fry for a minute.
  3. Stir in the green peas, coriander, salt, and pepper, then cover and cook for about 4 minutes.
  4. Mix in the artichokes and olives, taste, and adjust seasoning if necessary.
  5. Serve warm or cold as desired.
