Artichoke Asparagus and Green Bean Salad

Ingredients

  • ½ pound green beans, trimmed
  • 1 bunch asparagus, trimmed
  • 1 15-ounce can quartered artichoke hearts, drained
  • ¼ cup chopped red onion
  • 1 clove garlic, crushed
  • 10 leaves basil, rolled and sliced into ribbons
  • 1 whole lemon, juiced
  • 3 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Combine artichoke hearts, onions, garlic, lemon juice, olive oil, salt, and pepper in a large bowl and toss gently.
  2. Cut green beans and asparagus into one-inch pieces.
  3. Steam the green beans and asparagus until al dente, about 2 to 3 minutes.
  4. Toss the hot vegetables into the bowl with the artichoke mixture.
  5. Add more salt and pepper to taste, then finish with fresh basil.
  6. Serve and enjoy!
