Instructions
- Whisk together soy sauce, rice vinegar, honey, and red curry paste in a slow cooker.
- Pat the chicken thighs dry and sprinkle with salt, then place in the slow cooker and coat with the sauce.
- Cover and cook on low for about 5 hours until the chicken is tender.
- Transfer the chicken to a bowl and whisk the peanut butter into the sauce.
- Drizzle the peanut sauce over the chicken and top with scallions, jalapeños, and peanuts if desired.
- Serve with steamed rice and lime wedges.
