Ingredients

The sauce

  • cup soy sauce
  • ¼ cup unseasoned rice vinegar
  • 2 Tbsp. honey
  • 2 Tbsp. red curry paste

The chicken

  • 2 lb. skinless, boneless chicken thighs
  • 2 tsp. kosher salt

The finishing touches

  • 1 cup peanut butter
  • to taste sliced scallions
  • to taste sliced jalapeños
  • to taste crushed salted roasted peanuts
  • to serve steamed rice
  • to serve lime wedges

Instructions

  1. Whisk together soy sauce, rice vinegar, honey, and red curry paste in a slow cooker.
  2. Pat the chicken thighs dry and sprinkle with salt, then place in the slow cooker and coat with the sauce.
  3. Cover and cook on low for about 5 hours until the chicken is tender.
  4. Transfer the chicken to a bowl and whisk the peanut butter into the sauce.
  5. Drizzle the peanut sauce over the chicken and top with scallions, jalapeños, and peanuts if desired.
  6. Serve with steamed rice and lime wedges.
