Ingredients

The chicken

  • pounds boneless, skinless chicken thighs or chicken breasts

The sauce

  • cup low-sodium soy sauce
  • cup honey
  • 2 tablespoons tomato paste
  • 2 teaspoons chili paste (sambal oelek, sriracha, or hot sauce of choice)
  • 4 cloves garlic (minced)
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch

For serving

  • as needed prepared brown rice, quinoa, or cauliflower rice
  • as needed toasted sesame seeds
  • as needed chopped green onion

Instructions

  1. Place the chicken in the slow cooker.
  2. Whisk together the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar, then pour over the chicken.
  3. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours until the chicken is cooked through.
  4. Remove the chicken and let it cool slightly, then whisk the cornstarch into the sauce in the slow cooker.
  5. Cook on HIGH for 15 minutes to thicken the sauce, stirring occasionally.
  6. Shred the chicken and return it to the slow cooker, stirring to coat in the sauce.
  7. Serve over rice, topped with green onions and sesame seeds.
