Slow Cooker Honey Garlic Chicken

Ingredients

The chicken

  • 3 lbs Chicken Legs or Thighs
  • 2 teaspoons Kosher Salt
  • ½ teaspoon Pepper
  • ¼ cup Water

The sauce

  • ½ cup Honey
  • cup Soy Sauce, low sodium
  • 2 Tablespoons Ketchup
  • 1 teaspoon Ginger, grated
  • 4 - 5 lg Garlic Cloves, pressed or finely minced
  • 2 Tablespoons Onion, finely minced
  • ¼ - ½ teaspoon Red Pepper Flakes

To thicken

  • 2 Tablespoons Corn Starch
  • 3 Tablespoons Cold Water

To serve

  • 4 cups Cooked Rice
  • Sesame Seeds for Garnish
  • Chopped Scallions for Garnish

Instructions

  1. Spray the inside of the crock and turn it on to Low setting.
  2. Season the chicken with salt and pepper on all sides.
  3. Add water to the crock and place the chicken inside, then cover it to warm up.
  4. In a measuring cup, whisk together honey, soy sauce, ketchup, ginger, garlic, onion, and red pepper flakes, then pour over the chicken.
  5. Cook on Low for 2-4 hours, checking after 2 hours.
  6. Once cooked, remove the chicken and cover it lightly.
  7. Turn the slow cooker to High setting.
  8. Whisk together corn starch and cold water, then add to the liquid in the crock and stir.
  9. Return the chicken to the crock and cook on High until thickened, about 10 to 15 minutes.
  10. Serve over cooked rice, garnished with sesame seeds and scallions.
