Ingredients

The chicken

  • 2 pounds bone-in chicken thighs

The seasonings

  • 2 teaspoons sea salt
  • ½ teaspoon freshly ground black pepper

The fats

  • ¼ cup unsalted butter
  • 1 tablespoon avocado oil

The sauce

  • ¼ cup honey
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tablespoons whole grain mustard
  • 1 teaspoon minced garlic

Instructions

  1. Pat the chicken thighs dry and season both sides with salt and pepper.
  2. Heat 1 tablespoon of butter and the avocado oil in a large skillet over medium-high heat.
  3. Add the chicken thighs, skin side down, and cook for 5 minutes until golden brown.
  4. Transfer the chicken to the slow cooker, skin side up.
  5. In a small bowl, whisk together the honey, soy sauce, broth, mustard, and garlic.
  6. Pour the sauce over the chicken and dice the remaining butter to sprinkle on top.
  7. Cover and cook on low for 5 to 6 hours or high for 3 hours until the chicken reaches 165°F.
