Ingredients

The chicken

  • 8 pieces boneless skinless chicken thighs

The sauce

  • cup ketchup
  • ¼ cup honey
  • ¼ cup soy sauce
  • 1 Tbsp sriracha
  • 2 tsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 2 tsp rice vinegar
  • 2 Tbsp cornstarch
  • 2 Tbsp water
  • to taste none sliced green onions (optional)
  • to taste none sesame seeds (optional)

Instructions

  1. Place the chicken thighs in a slow cooker.
  2. In a bowl, whisk together the ketchup, honey, soy sauce, sriracha, sesame oil, garlic, and ginger.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low heat for about 3 to 4 hours until the chicken is tender and reaches 165°F.
  5. Transfer the chicken to a plate and cover with foil to keep warm.
  6. Pour the cooking juices into a saucepan, add vinegar, and heat until simmering.
  7. Whisk together cornstarch and water, then add to the sauce in the saucepan.
  8. Simmer the sauce while whisking for 1 minute until thickened.
  9. Pour the thickened sauce over the chicken and garnish with green onions and sesame seeds if desired.
