Instructions
- Place the chicken thighs in a slow cooker.
- In a bowl, whisk together the ketchup, honey, soy sauce, sriracha, sesame oil, garlic, and ginger.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low heat for about 3 to 4 hours until the chicken is tender and reaches 165°F.
- Transfer the chicken to a plate and cover with foil to keep warm.
- Pour the cooking juices into a saucepan, add vinegar, and heat until simmering.
- Whisk together cornstarch and water, then add to the sauce in the saucepan.
- Simmer the sauce while whisking for 1 minute until thickened.
- Pour the thickened sauce over the chicken and garnish with green onions and sesame seeds if desired.
