Ingredients

The chicken

  • 2.5 lbs chicken thighs bone-in, skin-on

The sauce

  • 2 tablespoon olive oil
  • 1 teaspoon sea salt or table salt
  • ¼ teaspoon black pepper
  • 1 cup ketchup
  • ½ cup low sodium soy sauce
  • ½ cup honey
  • 1 cup onion, fine dice
  • 2 tablespoon fresh garlic, fine mince
  • 1 teaspoon sweet paprika or smoked paprika
  • ½ teaspoon dried mustard
  • ½ teaspoon dried thyme
  • 1 tablespoon Italian parsley, finely chopped for garnish

Instructions

  1. Pat dry the chicken thighs and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken skin side down until golden brown.
  3. Transfer the chicken to the slow cooker, skin-side up.
  4. In a bowl, whisk together ketchup, soy sauce, honey, minced garlic, diced onion, thyme, paprika, and mustard.
  5. Pour the sauce mixture over the chicken in the slow cooker.
  6. Cover and cook on high for 3 hours or low for 5 hours.
  7. Once cooked, skim off excess fat from the sauce, if necessary, and heat until thickened.
  8. Remove the chicken from the slow cooker, place on a serving dish, and spoon the sauce over it.
  9. Garnish with fresh chopped parsley and serve.
