Slow Cooker Chicken Thighs

Instructions
- Pat dry the chicken thighs and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken skin side down until golden brown.
- Transfer the chicken to the slow cooker, skin-side up.
- In a bowl, whisk together ketchup, soy sauce, honey, minced garlic, diced onion, thyme, paprika, and mustard.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on high for 3 hours or low for 5 hours.
- Once cooked, skim off excess fat from the sauce, if necessary, and heat until thickened.
- Remove the chicken from the slow cooker, place on a serving dish, and spoon the sauce over it.
- Garnish with fresh chopped parsley and serve.
