Ingredients

The chicken

  • lbs chicken breast or thighs, cut into 1 inch cubes
  • 3 cloves garlic, rough chopped
  • 1 tablespoon fresh ginger, chopped
  • 1 teaspoon peanut oil, coconut oil or olive oil

The sauce

  • 13 ounces full fat coconut milk
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chili garlic paste
  • ½ cup peanut butter

Seasoning

  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes

Optional garnishes

  • 1 tablespoon lemongrass
  • 4-5 leaves kefir lime leaves

Instructions

  1. Cut the chicken into 1-inch cubes and sprinkle with salt.
  2. For the Instant Pot, sauté ginger and garlic in oil until fragrant, then add coconut milk, soy sauce, honey, lime juice, chili paste, and chicken, and set to high pressure.
  3. For stovetop, brown the chicken in oil, then add garlic and ginger, followed by the remaining sauce ingredients, and simmer until cooked.
  4. Stir in peanut butter and adjust flavors as needed.
  5. Serve over jasmine rice or spinach, and garnish as desired.
