Instructions
- Cut the chicken into 1-inch cubes and sprinkle with salt.
- For the Instant Pot, sauté ginger and garlic in oil until fragrant, then add coconut milk, soy sauce, honey, lime juice, chili paste, and chicken, and set to high pressure.
- For stovetop, brown the chicken in oil, then add garlic and ginger, followed by the remaining sauce ingredients, and simmer until cooked.
- Stir in peanut butter and adjust flavors as needed.
- Serve over jasmine rice or spinach, and garnish as desired.
