Ingredients

The chicken

  • pounds boneless skinless chicken breasts, chopped into bite-sized pieces

The sauce

  • 3 tablespoons cornstarch or almond flour
  • ¼ cup peanut butter
  • ¼ cup hoisin sauce or keto teriyaki sauce
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • ½ cup water
  • 2 tablespoons oil for frying

Instructions

  1. In a small bowl, combine the chicken and cornstarch (or almond flour) until well coated.
  2. In a mixing bowl, whisk together the peanut butter, hoisin sauce, soy sauce, sesame oil, minced garlic, and water until smooth.
  3. Heat oil in a non-stick pan over medium heat. Add the chicken and cook for 5-6 minutes until no longer pink.
  4. Pour the sauce over the chicken and mix until coated. Cook for an additional 4-5 minutes until the sauce thickens.
  5. Remove from heat and serve, optionally garnished with sesame seeds and green onions.
