Spooky Deviled Eggs with Avocado

Ingredients

The eggs

  • 12 pieces Simply Nature Grade A Organic Cage Free Brown Eggs

The filling

  • 1 medium ripe avocado
  • 2 tablespoons Burman’s Mayonnaise
  • 2 teaspoons lime juice
  • 1 teaspoon Burman’s Dijon Mustard
  • ¼ teaspoon Stonemill Ground Cumin
  • ¼ teaspoon Stonemill Sea Salt
  • to taste Freshly ground Stonemill Peppercorn
  • teaspoon Stonemill Chili Powder

The garnish

  • 12 pieces Southern Grove Pistachios, shells removed, halved crosswise
  • 1 can Tuscan Garden Large Pitted Ripe Olives, sliced

Instructions

  1. Boil the eggs in a pot of water for 12 minutes, then cool them in ice water.
  2. Peel the eggs and slice them in half lengthwise, removing the yolks.
  3. In a food processor, combine the yolks with avocado, mayonnaise, lime juice, mustard, cumin, salt, pepper, and chili powder, and blend until smooth.
  4. Transfer the filling to a resealable plastic bag and refrigerate until ready to serve.
  5. Fill the egg whites with the yolk mixture just before serving.
  6. Garnish each egg with a pistachio and a slice of olive.
