Instructions
- Boil the eggs in a pot of water for 12 minutes, then cool them in ice water.
- Peel the eggs and slice them in half lengthwise, removing the yolks.
- In a food processor, combine the yolks with avocado, mayonnaise, lime juice, mustard, cumin, salt, pepper, and chili powder, and blend until smooth.
- Transfer the filling to a resealable plastic bag and refrigerate until ready to serve.
- Fill the egg whites with the yolk mixture just before serving.
- Garnish each egg with a pistachio and a slice of olive.
