The main ingredients

  • 8 slices bacon, chopped
  • 8 ounces baby bella mushrooms, sliced
  • 4 cups low-sodium chicken broth
  • 3 cups milk, divided
  • 12 ounces penne pasta
  • 1 pound asparagus, tough ends trimmed, cut into 1-inch pieces
  • 4 ounces cream cheese, softened
  • 2 tablespoons all-purpose flour
  • ½ cup Parmesan cheese

Instructions

  1. Cook the bacon in a skillet until crispy, then transfer to a paper towel-lined plate.
  2. Drain excess bacon grease, leaving a teaspoon in the skillet.
  3. Add mushrooms to the skillet, season with salt and pepper, and cook until browned.
  4. Add chicken broth, 2 cups of milk, pasta, salt, and pepper to the skillet, and bring to a simmer.
  5. Cook the pasta for about 8-9 minutes, stirring occasionally.
  6. Add asparagus and cook for another 4-5 minutes until tender.
  7. Blend the remaining milk, cream cheese, and flour until smooth.
  8. Gradually add the blended mixture to the skillet, stirring quickly to combine.
  9. Simmer until the sauce thickens, then remove from heat and stir in the bacon and Parmesan cheese.
