Ingredients

The pasta

  • ½ lb. uncooked pasta (linguine)

The bacon

  • ½ lb. uncooked bacon, diced

The vegetables

  • ½ lb. fresh asparagus, ends trimmed and cut into 2-inch pieces

The sauce

  • ½ cup dry white wine
  • ½ cup grated or flaked Parmesan cheese

Instructions

  1. 1. Cook the pasta in salted boiling water until al dente according to package instructions.
  2. 2. In a sauté pan, cook the diced bacon over medium-high heat until crispy, then remove and set aside.
  3. 3. In the same pan, sauté the asparagus in the bacon grease for about 5-6 minutes until cooked but still firm.
  4. 4. Add the white wine to the pan and deglaze by scraping the bottom to incorporate the browned bits, cooking until reduced by half.
  5. 5. Drain the pasta and add it to the pan along with the cooked bacon, asparagus, and ¼ cup of Parmesan cheese, tossing to combine.
  6. 6. Sprinkle the remaining Parmesan cheese on top and serve immediately.
