Ingredients

The chicken

  • 1 lb boneless skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp black pepper

The pasta

  • 12 oz penne pasta

The vegetables

  • 1 lb asparagus

The sauce

  • Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 cloves garlic
  • cup milk
  • ¼ cup cream or half and half
  • 3 oz Neufchatel cheese
  • cup shredded Parmesan

The optional ingredient

  • 4-5 slices bacon

Instructions

  1. Prepare a herb mixture with basil, oregano, thyme, salt, and pepper, and sprinkle it over the chicken.
  2. Cook the chicken in an oiled skillet until fully cooked, then let it rest and dice it.
  3. Cook the pasta according to package instructions, reserving some pasta water.
  4. In a clean skillet, melt butter, whisk in flour, and cook for a minute.
  5. Add minced garlic and cook for an additional 30 seconds.
  6. Slowly pour in milk and cream, whisking to combine, and bring to a boil.
  7. Reduce heat and stir in Neufchatel and Parmesan cheese until melted.
  8. Combine the cooked pasta with the sauce, then add the diced chicken, steamed asparagus, and crumbled bacon.
  9. Adjust the consistency with reserved pasta water as needed and serve immediately.
