Chocolate Covered Pumpkin Spice Oatmeal Bites

The chocolate coating

Instructions
- Line a cookie sheet with parchment paper.
- Mix oats, flax, salt, and pumpkin pie spice in a bowl, then add almond butter, maple syrup, and vanilla and combine.
- Wet your hands and form the mixture into about 18 balls, placing them on the cookie sheet to freeze.
- Melt chocolate chips and coconut oil in a mug, stirring until smooth.
- Coat each bite in the melted chocolate using a fork, sprinkle with candied ginger, and freeze until hardened.
- Store in the refrigerator or freezer, and enjoy best straight from the freezer.
