Ingredients

The bites

  • 2 cups old-fashioned oats
  • ¼ cup ground flax seed
  • ½ tsp sea salt
  • 1 tbsp pumpkin pie spice
  • ½ cup almond butter (the drippy kind)
  • cup pure maple syrup or honey
  • 1 tsp vanilla extract

The chocolate coating

  • ¾ cup chocolate chips
  • tsp coconut oil
  • to taste finely chopped candied ginger (for topping)

Instructions

  1. Line a cookie sheet with parchment paper.
  2. Mix oats, flax, salt, and pumpkin pie spice in a bowl, then add almond butter, maple syrup, and vanilla and combine.
  3. Wet your hands and form the mixture into about 18 balls, placing them on the cookie sheet to freeze.
  4. Melt chocolate chips and coconut oil in a mug, stirring until smooth.
  5. Coat each bite in the melted chocolate using a fork, sprinkle with candied ginger, and freeze until hardened.
  6. Store in the refrigerator or freezer, and enjoy best straight from the freezer.
