Instructions
- Prepare the crust by blending the Oreo cookies into fine crumbs and mixing with melted butter, then press into an 8 or 9-inch springform pan.
- In a large mixing bowl, beat together the cream cheese and powdered sugar until combined.
- Add vanilla extract and peanut butter, then continue beating until smooth.
- Slowly add the heavy cream and beat until fully incorporated and smooth.
- Transfer the cheesecake filling onto the prepared pie crust and refrigerate for at least 6 hours or overnight.
- Prepare the ganache by heating the coconut cream, then adding chocolate chips and whisking until combined.
- Pour the ganache over the cheesecake and refrigerate for 30 minutes before serving.
