Bacon Wrapped Pork Tenderloin with Brown Sugar Glaze

Ingredients

The glaze

  • ¼ cup honey
  • ¼ cup brown sugar
  • 3 tablespoons dijon mustard
  • 1 tablespoon soy sauce or coconut aminos

The pork

  • 1 pound pork tenderloin
  • 12 strips bacon
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Mix all glaze ingredients in a small bowl.
  3. Pat the pork tenderloin dry and season with salt and pepper.
  4. Rub half of the glaze over the tenderloin.
  5. Wrap the bacon strips around the tenderloin.
  6. Brush the remaining glaze over the bacon-wrapped tenderloin.
  7. Bake for 30-35 minutes.
  8. Remove from the oven, baste with juices, and let rest for at least 5 minutes before slicing.
