Maple Bacon-Wrapped Pork Tenderloin

Ingredients

The pork tenderloin

  • 1 2 lb. pork tenderloin
  • 6–8 slices maple bacon
  • 1 Tbsp. vegetable or canola oil

The rosemary cherry sauce

  • 1 Tbsp. olive oil
  • 1 cup thinly-sliced red onions
  • 3 cloves garlic
  • 1 cup dried cherries
  • 1 Tbsp. fresh rosemary or 1 tsp. dried rosemary
  • 1 ½ cups chicken stock
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. cornstarch

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. Wrap the pork tenderloin with bacon and secure with toothpicks.
  3. 3. Heat oil in a skillet and sear the pork on all sides for about 2 minutes each side.
  4. 4. Transfer the pork to a baking pan and bake for 20 minutes until the internal temperature reaches 140°F.
  5. 5. For the sauce, heat olive oil in the same skillet and sauté onions, garlic, cherries, and rosemary for about 6 minutes.
  6. 6. Add chicken stock and bring to a boil.
  7. 7. Whisk together vinegar and cornstarch, then add to the boiling broth and cook until thickened.
  8. 8. Serve the pork with the sauce.
