Maple Bacon-Wrapped Pork Tenderloin

Instructions
- 1. Preheat the oven to 375°F.
- 2. Wrap the pork tenderloin with bacon and secure with toothpicks.
- 3. Heat oil in a skillet and sear the pork on all sides for about 2 minutes each side.
- 4. Transfer the pork to a baking pan and bake for 20 minutes until the internal temperature reaches 140°F.
- 5. For the sauce, heat olive oil in the same skillet and sauté onions, garlic, cherries, and rosemary for about 6 minutes.
- 6. Add chicken stock and bring to a boil.
- 7. Whisk together vinegar and cornstarch, then add to the boiling broth and cook until thickened.
- 8. Serve the pork with the sauce.
