Maple Bourbon Pork Tenderloin

Ingredients

The pork

  • 2 lb organic pastured pork tenderloins

The marinade

  • 1 cup bourbon
  • ½ cup maple syrup
  • 2 Tbsp avocado oil
  • 10 cloves garlic, minced or pressed
  • 2 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ¼ tsp cayenne pepper
  • to taste parsley for garnish

Instructions

  1. Trim off any silvery skin from the pork tenderloins.
  2. Mix together bourbon, maple syrup, 1 Tbsp avocado oil, garlic, sea salt, pepper, and cayenne in a mixing bowl.
  3. Add the tenderloins to the marinade, ensuring they are submerged, and refrigerate overnight.
  4. Preheat the oven to 400ºF (205ºC).
  5. Remove the tenderloins from the marinade and dry them off.
  6. Pour the marinade into a saucepan and bring it to a boil, then reduce to a gentle boil to thicken into a glaze.
  7. In an oven-proof skillet, heat 1 Tbsp avocado oil and brown the tenderloins on all sides for about 5-7 minutes.
  8. Transfer the skillet to the oven and roast for about 20 minutes or until the internal temperature reaches 145ºF (63ºC).
  9. Remove from the oven, let rest for 5 minutes, then slice and serve with the glaze.
