Ingredients

The pork medallions

  • 24 oz pork tenderloin
  • ½ tsp salt
  • ½ tsp ground black pepper

The sauce

  • 2 tbsp avocado oil
  • 1 cup cranberries
  • ¼ cup chicken broth
  • ¼ cup pure maple syrup
  • 1 tsp fresh thyme

Instructions

  1. Slice the pork tenderloin into 8 equal sized medallions and season with salt and pepper.
  2. Heat oil in a heavy skillet over medium-high heat.
  3. Add the pork medallions to the hot pan and cook for 4 minutes per side until golden brown.
  4. Remove the seared medallions to a plate to collect the juices.
  5. Add chicken broth, maple syrup, cranberries, and thyme to the pan; bring to a simmer until cranberries start to pop.
  6. Return the medallions to the pan with their juices and cook for about 2 minutes until the sauce thickens and the meat is cooked through.
  7. Remove from heat and let the meat sit in the sauce for 5 minutes before serving.
