Instructions
- Slice the pork tenderloin into 8 equal sized medallions and season with salt and pepper.
- Heat oil in a heavy skillet over medium-high heat.
- Add the pork medallions to the hot pan and cook for 4 minutes per side until golden brown.
- Remove the seared medallions to a plate to collect the juices.
- Add chicken broth, maple syrup, cranberries, and thyme to the pan; bring to a simmer until cranberries start to pop.
- Return the medallions to the pan with their juices and cook for about 2 minutes until the sauce thickens and the meat is cooked through.
- Remove from heat and let the meat sit in the sauce for 5 minutes before serving.
