The pork

  • 20 oz pork tenderloin

The marinade

  • ¼ cup pure maple syrup
  • ¼ cup coconut aminos
  • 1 unit lime (juice of)
  • 1 clove garlic (minced)
  • ½ tsp Himalayan salt
  • ½ tsp cayenne pepper
  • ½ tsp chili pepper flakes

Instructions

  1. Place the pork tenderloin in a shallow dish or resealable bag.
  2. Mix all marinade ingredients in a bowl until well combined.
  3. Pour the marinade over the pork, ensuring it is fully coated, and refrigerate overnight.
  4. Flip the pork occasionally while marinating for even flavoring.
  5. In a skillet over medium-high heat, add cooking fat and sear the tenderloin on all sides until golden.
  6. Remove burnt bits from the pan, add the marinade, and reduce heat to medium-low.
  7. Cook the meat for about 20 to 25 minutes, turning occasionally until the liquid is mostly evaporated.
  8. Transfer the glazed tenderloin to a plate and refrigerate uncovered overnight.
  9. Slice the meat thinly on a diagonal and arrange on a platter, garnishing with lettuce and herbs if desired.
