Spicy Quick Pickled Radishes

Ingredients

The pickles

  • 1 bunch radishes
  • ¾ cup white wine vinegar or apple cider vinegar
  • ¾ cup water
  • 3 tablespoons honey or maple syrup
  • 2 teaspoons salt
  • 1 teaspoon red pepper flakes
  • ½ teaspoon whole mustard seeds (optional)

Optional add-ins

  • 1 clove garlic
  • to taste black peppercorns
  • to taste fennel seeds
  • to taste coriander seeds

Instructions

  1. Slice off the tops and bottoms of the radishes, then slice them into very thin rounds.
  2. Pack the radish rounds into a pint-sized canning jar and top with red pepper flakes and mustard seeds.
  3. In a small saucepan, combine the vinegar, water, honey or maple syrup, and salt. Bring to a boil while stirring.
  4. Pour the boiling mixture over the radishes in the jar.
  5. Let the mixture cool to room temperature before serving or refrigerating.
