Spicy Quick Pickled Radishes

white wine vinegar or apple cider vinegar

Instructions
- Slice off the tops and bottoms of the radishes, then slice them into very thin rounds.
- Pack the radish rounds into a pint-sized canning jar and top with red pepper flakes and mustard seeds.
- In a small saucepan, combine the vinegar, water, honey or maple syrup, and salt. Bring to a boil while stirring.
- Pour the boiling mixture over the radishes in the jar.
- Let the mixture cool to room temperature before serving or refrigerating.
