Ingredients

The radishes

  • 4 bunches red radishes

The brine

  • 1 cup white vinegar
  • 1 cup water
  • tablespoons cane sugar
  • 1 tablespoon sea salt
  • ½ teaspoon mixed peppercorns
  • ½ teaspoon mustard seeds

Instructions

  1. Wash and trim the radishes, then thinly slice or halve them.
  2. Divide the radishes among 4 jars.
  3. In a saucepan, combine vinegar, water, sugar, and salt over medium heat and stir until dissolved.
  4. Let the brine cool, then pour it over the radishes in the jars.
  5. Add peppercorns and mustard seeds to the jars, cover, and refrigerate.
