Ingredients

Quick-Pickled Cucumbers

  • 1 medium cucumber
  • 1 tablespoon salt
  • 2 teaspoons sugar
  • 1 head garlic
  • 4 sprigs fresh dill
  • 1 tablespoon coriander seeds
  • 1 tablespoon mustard seeds
  • 1 dry bay leaf
  • 1 dry chile pepper
  • ½ cup filtered water
  • ½ cup rice vinegar or white distilled vinegar

Quick-Pickled Red Onions

  • 1 medium red onion
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 jalapeño pepper quarter lengthwise
  • 12 sprigs fresh cilantro
  • 10 fresh chives
  • ½ cup filtered water
  • ½ cup rice vinegar or white distilled vinegar

Quick-Pickled Radishes

  • 1 pound radishes
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 12 fresh chives
  • 3 sprigs fresh dill
  • 1 tablespoon coriander seeds
  • 1 tablespoon mustard seeds
  • 1 tablespoon tricolor peppercorns
  • ½ cup filtered water
  • ½ cup rice vinegar or white distilled vinegar

Instructions

  1. For cucumbers, combine cucumbers, salt, sugar, garlic, dill, coriander seeds, mustard seeds, bay leaf, and chile pepper in a jar. Add water and vinegar to fill the jar. Shake and refrigerate for at least 30 minutes.
  2. For red onions, fill a jar with red onion, salt, sugar, jalapeño, cilantro, and chives. Add water and vinegar to fill the jar. Shake and refrigerate for at least 30 minutes.
  3. For radishes, fill a jar with radishes, salt, sugar, chives, dill, coriander seeds, mustard seeds, and peppercorns. Add water and vinegar to fill the jar. Shake and refrigerate for at least one hour.
