Ingredients

  • 8-9 ounces baby or English cucumbers
  • ½ cup rice vinegar
  • ½-1 teaspoon kosher salt
  • ¼ teaspoon coarse freshly ground black pepper
  • 4-5 cloves garlic
  • 5-6 pieces ice cubes

Instructions

  1. Trim the ends off the cucumbers.
  2. Use a vegetable peeler to shave the cucumbers into ribbons and place them in a small mixing bowl.
  3. Gently toss the cucumber ribbons with the remaining ingredients.
  4. Cover the bowl and refrigerate for at least 20-30 minutes before serving.
