Ingredients

The cookies

  • 1 cup unsalted butter
  • 1 cup white granulated sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • cups all-purpose flour

The salted caramel

  • 1⅓ cups white sugar
  • cup water
  • 2 tablespoons unsalted butter
  • cup heavy cream
  • 1 teaspoon vanilla extract
  • to taste flaky sea salt

For decorating

  • to taste powdered sugar

Instructions

  1. Prepare the cookie dough by beating butter, sugar, salt, and vanilla until fluffy.
  2. Add the egg and egg yolk, then mix in the flour until combined.
  3. Wrap the dough in plastic wrap and chill in the fridge for at least 1 hour.
  4. Preheat the oven to 350°F (175°C).
  5. Roll out the dough between parchment paper to about 1/8-inch thickness.
  6. Chill the rolled dough in the freezer for 5 minutes before cutting out cookies.
  7. Cut out shapes and place them on a baking sheet, ensuring they are spaced apart.
  8. Bake for 8 to 10 minutes until lightly golden, then cool on a rack.
  9. To make the caramel, combine sugar and water in a saucepan and cook until dissolved.
  10. Increase heat and cook until the mixture turns golden brown, then add butter and cream.
  11. Mix in vanilla and let the caramel cool slightly.
  12. Dust the cookie tops with powdered sugar, then spread salted caramel on the bottoms.
  13. Sandwich the tops and bottoms together.
