Instructions
- Prepare the cookie dough by beating butter, sugar, salt, and vanilla until fluffy.
- Add the egg and egg yolk, then mix in the flour until combined.
- Wrap the dough in plastic wrap and chill in the fridge for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Roll out the dough between parchment paper to about 1/8-inch thickness.
- Chill the rolled dough in the freezer for 5 minutes before cutting out cookies.
- Cut out shapes and place them on a baking sheet, ensuring they are spaced apart.
- Bake for 8 to 10 minutes until lightly golden, then cool on a rack.
- To make the caramel, combine sugar and water in a saucepan and cook until dissolved.
- Increase heat and cook until the mixture turns golden brown, then add butter and cream.
- Mix in vanilla and let the caramel cool slightly.
- Dust the cookie tops with powdered sugar, then spread salted caramel on the bottoms.
- Sandwich the tops and bottoms together.
