The filling

Instructions
- Whisk together the all-purpose flour, almond flour, and salt in a medium bowl.
- In a stand mixer, cream together the butter, powdered sugar, and brown sugar until well blended.
- Mix in the egg yolks, vanilla extract, and almond extract.
- Add the flour mixture and mix until combined.
- Divide the dough into two portions, shape into balls, flatten into disks, wrap, and chill for 45 to 60 minutes.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Roll out one disk of dough to 1/6-inch thickness on a floured surface and cut into desired shapes.
- Transfer the cut shapes to the baking sheet and chill for 10 to 15 minutes.
- Bake for 9 to 11 minutes until edges are lightly golden, then cool on a wire rack.
- Spread jam on the whole cookies and dust the cut-out cookies with powdered sugar before sandwiching them together.
