Ingredients

The dough

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • ½ tsp salt
  • 1 cup unsalted butter
  • ½ cup powdered sugar
  • cup packed light-brown sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • ¼ tsp almond extract

The filling

  • ¾ cup thick fruit jam or preserves

Instructions

  1. Whisk together the all-purpose flour, almond flour, and salt in a medium bowl.
  2. In a stand mixer, cream together the butter, powdered sugar, and brown sugar until well blended.
  3. Mix in the egg yolks, vanilla extract, and almond extract.
  4. Add the flour mixture and mix until combined.
  5. Divide the dough into two portions, shape into balls, flatten into disks, wrap, and chill for 45 to 60 minutes.
  6. Preheat the oven to 350°F and line baking sheets with parchment paper.
  7. Roll out one disk of dough to 1/6-inch thickness on a floured surface and cut into desired shapes.
  8. Transfer the cut shapes to the baking sheet and chill for 10 to 15 minutes.
  9. Bake for 9 to 11 minutes until edges are lightly golden, then cool on a wire rack.
  10. Spread jam on the whole cookies and dust the cut-out cookies with powdered sugar before sandwiching them together.
