Healthy Gluten-Free Linzer Cookies

Instructions
- 1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
- 2. In a medium bowl, combine almond flour, coconut flour, baking soda, and salt.
- 3. In a large bowl, mix the egg, honey, melted coconut oil, almond extract, and vanilla extract.
- 4. Add the dry ingredients to the wet ingredients and mix until a dough forms.
- 5. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
- 6. Roll out the dough to ¼ to ½ inch thick and cut into shapes using Linzer cookie cutters.
- 7. Bake for 6-8 minutes, watching closely to prevent burning. Let cool.
- 8. Dust the cooled cookies with powdered sugar.
- 9. Spread 1 teaspoon of jam on the full cookies and sandwich them with the cookies that have holes.
