Ingredients

The cookie dough

  • cups almond flour
  • cup coconut flour
  • ½ teaspoon baking soda
  • teaspoon salt
  • 1 large egg
  • cup honey
  • ½ cup melted coconut oil
  • ¼ teaspoon almond extract
  • 1 teaspoon vanilla extract

The filling and topping

  • ½ cup seedless jam (any fruit flavor)
  • ¼ cup powdered sugar

Instructions

  1. 1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. 2. In a medium bowl, combine almond flour, coconut flour, baking soda, and salt.
  3. 3. In a large bowl, mix the egg, honey, melted coconut oil, almond extract, and vanilla extract.
  4. 4. Add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. 5. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
  6. 6. Roll out the dough to ¼ to ½ inch thick and cut into shapes using Linzer cookie cutters.
  7. 7. Bake for 6-8 minutes, watching closely to prevent burning. Let cool.
  8. 8. Dust the cooled cookies with powdered sugar.
  9. 9. Spread 1 teaspoon of jam on the full cookies and sandwich them with the cookies that have holes.
